We here at Tessho pride ourselves on our Hiroshima-style okonomiyaki. You’ll see why, as soon as you look over our counter at our master chefs preparing the hand-made okonomiyaki, and as the wonderful scent of okonomiyaki sauce hits you. The clang of the spatula, the smiles on diners’ faces, our cheerful staff… one foot in the door will be all you need to see that we are a traditional Japanese establishment where the customer’s satisfaction is paramount. Before you know it, you’ll find yourself talking and laughing with fellow diners! Bringing two smiling faces closer together, that is the miracle that defines Tessho.

THE HISTORY OF HIROSHIMA-STYLE OKONOMIYAKI

On August 6th 1945, the atomic bomb fell on Hiroshima, instantly turning the city into a charred waste. Although the war ended quickly thereafter, the tribulations of Hiroshima’s people did not. Foodstuffs were scarce, and starvation was common. Hiroshima okonomiyaki was borne of this charred wasteland, fusing the local iron plate tradition with flour acquired through American relief funds. As the post-war recovery got underway and certain ingredients slowly started becoming available, cabbage, egg, pork, and soba were introduced into the mixture, resulting in what we today call okonomiyaki. Its symbolism of the post-war restoration is one reason why Hiroshima okonomiyaki is frequently referred to as “soul food.”
